Ingredients:
For the Roasted Vegetables:
- 1 small sweet potato, peeled and diced into 1/2-inch cubes
- 1 red bell pepper, deseeded and diced into 1/2-inch pieces
- 1 red onion, roughly chopped
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (or to taste)
- Salt and black pepper to taste
For the Ginger-Turmeric Honey Drizzle:

- 2 cups cooked basmati or jasmine rice
- Fresh cilantro, chopped (for garnish)

The Method

Roast: Preheat oven to 400°F (200°C). Toss diced vegetables with olive oil, paprika, cayenne, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and caramelised.
