Salted Honey Ice-cream, Black Cherry & Almond Sunday
Oh June how we love your balmy long days and limitless excuses to eat ice-cream. Talking of which we have the perfect recipe to savour with the sunshine and its far simpler and healthier than you imagine!
- 6 bananas
- 3 tbsp honey (we recommend Pure Cambridgeshire Spring)
- 1 tsp sea salt flakes
- 2 tbsp milk
Cherry Compote Ingredients:
- Fresh cherries, pitted
- Almonds, toasted
- Honey to serve
- Peel and slice the bananas into 1 cm pieces and freeze in a freezer bag overnight.
- In a food processor whiz the frozen bananas, honey, milk and salt until smooth and thick, adding more honey and salt to taste. If not using immediately spoon into a freezer proof container and freeze.
- In a large sundae glass scoop the ice-cream, alternating with the cherry compote, fresh cherries and honey. Garnish with a whole cherry and some honeycomb for that extra WOW!
