Nutritious Raw Honey, Carrot and Apple Cookies

For a naturally sweet twist and a touch of prebiotic goodness, swap refined sugar for Maters & Co Raw Honey in these delicious cookies! Guilt free snacking at its finest!

INGREDIENTS (for approx. 20 cookies)

  • 2 cups / 150g Gluten Free or regular plain flour
  • 1 cup / 100g Gluten Free or regular rolled oats
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp cinnamon
  • 1 large egg
  • 1/3 cup / 50g coconut oil, melted
  • 1/4 cup / 60g Maters & Co raw honey honey (we used a light honey - Pure Orange Blossom)
  • 1 vanilla pod, seeds removed and kept
  • 1 cup / 80g grated organic carrot (1 medium carrot)
  • 1 cup / 80g grated organic apple (1 medium apple)
  • 1 medium banana
  • Optional: 1/3 cup / 50g – raw cacao chips

METHOD

  1. Preheat the oven to 350 f / 180 c . Line a cookie sheet with grease-proof paper.
  2. In a large bowl mix together the flour, oats, baking powder, baking soda and cinnamon
  3. In a separate smaller bowl beat the egg and add the melted coconut oil, honey and vanilla extract and stir well. Add this mixture to the large bowl with the dry ingredients and mix until well combined.
  4. Add the grated carrot, grated apple and mashed banana and again stir until everything is well mixed If using the chocolate chips, add now.
  5. Roll the cookie dough into 1 inch sized balls. The dough should make approximately 20 balls. Place each on the cookie sheet and press down lightly with a fork.
  6. Bake in the oven for 13-15 minutes. Do not overcook as this will result in a dry cookie.
  7. Allow cooling on a wire rack.
  8. Grab your favourite hot drink, find a quiet corner, savour and enjoy!
