Honey and Cardamom Hot Cross Buns

Spring is upon us and as far as we are concerned that can only mean one thing - hot cross buns are a-bakin’ and we are very happy about that. We’ve given ours a twist this year by making them honey and cardamom infused - they are sure to become your new favourite recipe.

Ingredients

  • 1 tbsp dried active yeast
  • 10g caster sugar 
  • 100g mountain honey
  • 375ml milk 
  • 635g plain flour 
  • 2 tsp mixed spice
  • 2 tsp ground cardamon 
  • 50g unsalted butter 
  • 1 egg 
  • 240g sultanas 
  • 55g candied mixed peel

Cross ingredients

  • 75g plain flour 
  • 80ml water

Glaze ingredients

  • 2 tbsp Cambs borage honey
  • Juice of an orange

Method

1. Gently warm the milk and sugar until just lukewarm and pour into the bowl of a
stand mixer - add the yeast and stir in, leave for 5 minutes to activate
2. Add the honey, flour, spices, butter and egg to the milk mixture and need using
the dough hook on a medium speed for 6-7 mins until the dough is smooth and
elastic. For the last minute add in the drive fruit and peel.
3. Once the dough is smooth cover the bowl with a tea towel and leave to prove for 1 hour
4. After an hour tip the dough out and divide into 12 equal balls of roughly 110g
each
5. Place in a 9”x12” baking tin lined with greaseproof paper and leave to rise,
uncovered for another hour
6. preheat the oven to 200’c
7. In a small bowl combine the flour and water to form a smooth paste and pipe in
lines over the buns to form the crosses just before they go in the oven. Bake for
15-20 mins until deep golden brown
8. In a small saucepan combine the honey and orange juice and melt together to
form the glaze. When the buns come out the oven brush generously with the
glaze before leaving to cool completely
