Salted Banana Honey Ice-cream, Black Cherry & Almond Sundae

Oh summer how we love your balmy long days and limitless excuses to eat ice-cream. Talking of which we have the perfect recipe to savour with the sunshine and it's far simpler and healthier than you imagine!

This recipe uses bananas, making it a delicious, dairy-free delight that everyone can enjoy.

Ingredients

• 6 bananas
• 3 tbsp honey (we recommend Pure Cambridgeshire Spring) or Pure Acacia
• 1 tsp sea salt flakes
• 2 tbsp milk

Cherry Compote Ingredients:

• Fresh cherries, pitted
• Almonds, toasted
• Honey to serve

Method

1. Peel and slice the bananas into 1 cm pieces and freeze in a freezer bag overnight.
2. In a food processor whiz the frozen bananas, honey, milk and salt until smooth and thick, adding more honey and salt to taste. If not using immediately spoon into a freezer proof container and freeze.
3. In a large sundae glass scoop the ice-cream, alternating with the cherry compote, fresh cherries and honey. Garnish with a whole cherry and some honeycomb for that extra WOW!
