A Delightful Wild Floral Caramel-Like Honey

Our raw mountain honey has a lovely mild caramel foretaste that transitions into a tropical floral flavour before settling into a slight burnt sugar bitterness and an aftertaste reminiscent of tea tannin.
This raw mountain honey is from the stunning and untouched Galician mountains in northwest Spain. It is harvested at altitudes of more than 500m above sea level from a variety of forest plants native to the region, including chestnut, oak, heather, brambles, and other blooms.
We recently conducted Total Activity (TA) testing on this variety to determine its antibacterial efficacy, and it received a stunning TA rating of 15.5, which was significantly above the standard.
The Total Activity (TA) rating measures both Peroxide Activity (PA) and Non-Peroxide Activity (NPA).Compared to the Manuka MGO (methylglyoxal) rating, which focusses primarily on the concentration of a specific antibacterial ingredient in Manuka honey, Total Activity testing provides a more comprehensive picture of honey's overall quality and health benefits.

All of this culminates in a honey full of polyphenols from various trees, flowers and plants making it a potent variety packed with antimicrobial and antibacterial properties.
A 1 star Great Taste Award winner for 2021 with one of the judges commenting:
"Caramel notes are apparent here and it leaves a distinctive, rustic, old fashioned taste. Of rich colour, it has a thick but spreadable consistency."
Uses
With its rich flavour and superior taste it is a favourite when used in granola and flapjacks along with porridge and as a topping on some breakfast items.
