Ingredients

1 ½ tbsp Maters and Co raw Starflower Borage honey

1 tbsp warm water (to dissolve the honey)

1 oz fresh lemon juice

4–6 oz chilled sparkling water or club soda

Optional: A few slices of fresh cucumber

Garnish: A sprig of fresh mint or borage flowers

Method

1. Stir the honey into the warm water until smooth.
2. Add the honey syrup, lemon juice and cucumber to a tall glass.
3. Fill with ice and top with sparkling water.
4. Stir gently, then finish with fresh mint or edible borage flowers.
5. Serve well chilled.
