Granola & Sourdough Honey & Jam Tart

This incredible dessert came from our link-up with Bertinet Bakery, Dorset Cereals & Cherry Tree Preserves. Enjoy!

 

Ingredients (Serves 4-6)

  • Box of Dorset Cereals Simply Granola (or similar)
  • 275g Maters & Co Summer honey
  • Bertinet Bakery sourdough bread (or similar)
  • The Cherry Tree Cherry & Amaretto Jam
  • 75g unsalted butter
  • 2 free range eggs
  • 200ml double cream
  • Lemon

Method

Whizz a box of Dorset Cereal Simply Granola with 75g of melted butter in a blender/processor, until sand like in texture.

Press the mixture into the base and up the sides of the tart case.

Spoon and spread on to the base a generous layer of The Cherry Tree Cherry & Amaretto Jam or other The Cherry Tree Jam of your choosing.

In a large bowl combine 200g of Bertinet sourdough breadcrumbs with 275g of warmed Maters & Co honey.

Stir in 2 eggs and 200ml double cream and the juice of one lemon.

Pour into the tart case and bake for 25mins in a 180ºC oven until just set.
