Honey Almond Cookies

If you adopt a gluten free / low sugar diet then here's a tasty treat that won't leave you feeling guilty. It calls for a tablespoon of honey so rest assured, you'll have plenty left for your breakfast!

These little bakes don't need long in the oven to achieve a delightful chewy honey consistency. The only problem you'll have is limiting yourself!

 

Ingredients

cups almond flour (240gr)
1/4 teaspoon kosher salt
1/4 teaspoon baking soda
1/2 cup coconut oil softened or butter (or 50/50)
1/8 cup Castor Sugar or Stevia
12-14 whole almonds or other nuts as garnish (optional)

Instructions

  • Pre-heat oven to 176 degrees celsius (160 fan assisted).
  • Line a baking sheet with parchment paper. Set it aside.
  • Mix together almond flour, salt, and baking soda in a bowl. 
  • Stir in the oil/butter and honey/sugar into the batter. 
  • Using a tablespoon-size measuring spoon, scoop the dough onto the prepared sheet pan. Gently press down to flatten. If preferred, place an almond in the centre of each cookie.
  • Bake for 10 minutes until they are lightly browned on top. Serve with a lovely cuppa!
