Roasted Butternut Squash Soup with Honey and Sage
As winter evenings draw in, there is nothing more comforting than a bowl of this Roasted Butternut Squash and Honey Soup.
We’ve elevated this classic with a simple touch of our golden raw honey, which works like a warm embrace, deepening the squash's natural sweetness and balancing the earthy sage.
This velvety-smooth soup is not just a meal; it's a moment of gentle nourishment, transforming simple ingredients into a truly satisfying and soul-soothing experience for your cosiest evenings.
Any varieties of our honey will work but we recommend choosing from our beautiful and delicate Delicate Rosemary Honey Rare Pink Thyme or Pure Wild Thyme Honey.
Ingredients
- 1 large Butternut Squash, halved and seeded.
- 2 tablespoons Olive Oil
- 1 teaspoon Sea Salt
- 1/2 teaspoon Black Pepper
- 1 Yellow Onion, chopped
- 3 cloves Garlic, minced
- 4 cups (1 litre) Vegetable or Chicken Broth (low sodium)
- 2-3 tablespoons Maters & Co Honey (Adjust to your taste for sweetness!)
- 1/4 cup Heavy Cream or Coconut Milk (Optional, for extra creaminess)
- 1 tablespoon fresh Sage, finely chopped (plus extra for garnish)
The Method
1. Roast the Squash (The Key to Depth):
- Preheat your oven to 200°C (400°F).
- Drizzle the cut side of the squash halves with a little olive oil, and season with salt and pepper. Place them cut-side down on a baking sheet.
- Roast for 40 to 50 minutes, or until the flesh is completely tender and slightly caramelised. This roasting step develops a beautiful, deep sweetness.
2. Build the Aromatic Base:
- In a large pan, heat the remaining olive oil over medium heat. Add the chopped onion and sauté gently until soft and translucent (about 5-7 minutes).
- Stir in the minced garlic and chopped sage, cooking for just one minute until fragrant.
3. Simmer and Infuse:
- Once the squash is cool enough to handle, scoop the tender flesh out of the skin and add it to the pan with the onions.
- Pour in the vegetable or chicken broth. Bring the mixture to a gentle simmer, cover, and let it cook for about 10 minutes to allow the flavours to marry beautifully.
4. Blend and Finish with Honey:
- Carefully use a hand blender (or transfer in batches to a regular blender) to blend the soup until it is velvety smooth.
- Return the soup to the pan. Stir in the Maters & Co Honey and the cream (if using). Taste and adjust the seasoning with salt and pepper as needed.
